Role Description

This role will combine chefmanship and technologist with focus on formulation. It is important that the position will be filled in by a person who is highly passionate in creating delicious dishes and at the same time with appreciation for the industrial recipe creation.

Responsibilities

• To co-develop product brief with MCO chef & CTI which will be used as the quality target for the development of the product
• To create new formulation according to the product brief via benchmarking existing recipes, adaptation of core formulation design or translating recipe from scratch
• To update existing formulation in case of rejuvenation according to the improvements set/agreed in the brief
• To use in recipe creation & update, basic technological requirements of the sourcing unit of implementation such as water activity, fill weight, packaging, etc.
• To ensure technical claims are delivered in the recipe design, i.e. free from nutritional, functionality claims, etc.
• To do recipe design in digital system such as PLM with accuracy and according to defined responsibility in the project
• To contribute to core formulation design to be used as a guide in recipe creation globally
• To implement recipe approval process and lead the session with business partners
• To also implement approved formulation in the sourcing unit
• To be able to conduct basic analytical tests such as pH, water activity, bulk density including technical calculations on unit conversions that will help on ensuring claims are delivered
• To drive passion for food within the team following the UFS purpose leading basic culinary training with the team and sharing kitchen insights that will be useful for design
• To help coach the team in formulation development activity
• To maintain awareness of competitor and supplier position in area of expertise.
• To support with technical information in case of need to protect technology/formulation.
• To ensure the compliance to the Code of Business Principles and all SHE and QA policies, including the support of product claims, risk management and environmental awareness & legislation.

Requirements

• University degree (Science or Engineering or Culinary)
• Minimum of 3-5 years relevant work experience in food industry as a chef /cook or comparable work experience to translate culinary briefings into industrial recipes , dry & pasty technology as an advantage
• With knowledge in dry savoury ingredients
• Able to operate microsoft programs
• Effective communication & presentation
